PURPOSE: A method of manufacturing whole red bean filling and a manufacturing method thereof are provided to improve taste and a mouth-feel of the whole red bean filling by removing tannin without destruction of nutrients of red bean. CONSTITUTION: A method of manufacturing whole red bean filling includes the following steps: washing and preparing red bean 40-65 weight%(S110); heating the red bean after putting the red bean into a steaming pot(S120); washing the red bean in a perforated case; drying the red bean with a drier; putting sodium polyphosphate 1-2 weight% into the red bean while heating the red bean; dehydrating the red bean; kneading the red bean after immersing the red bean in a sugar solution containing sugar 40 ~ 45 weight% and starch syrup 10-15 weight% for 20 ~ 30 hours(S170); removing tannin by compressing and heating the red bean for 15 ~ 30 minutes in 80-120°C; and heating the red bean for 30 ~ 50 minutes. |
