COATING SOLUTION, AND MANUFACTURING METHOD AND APPARATUS THEREOF

PROBLEM TO BE SOLVED: To provide a coating solution enabling efficient intake of dietary fibers at high concentration: to provide a method and an apparatus for producing a coating solution enabling continuous production of a large amount of coated rice without causing clogging or aggregation of rice grains in the device even when the coating solution has high viscosity and is added at a large amount.

SOLUTION: The coating solution is added to rice grains at a ratio of 6.0 to 8.0 wt.% to produce coated rice. The coating solution comprises a mixture including soluble dietary fibers and insoluble dietary fibers. The insoluble dietary fibers account for 0.5 to 2 pts.wt. based on 1 pt.wt. of the soluble dietary fibers. With respect to the dilution ratio of water to the mixture, the water accounts for 3 pts.wt. based on 7 pts.wt. of the mixture.
