SALT DOWN APPARATUS OF CHINESE CABBAGE USING OVERHEAT STEAM

PURPOSE: An apparatus for pickling Chinese cabbage with superheated steam is provided to remove parasite eggs while sterilizing the Chinese cabbage, and to increase productivity of a Chinese cabbage pickling process through a steam tunnel. CONSTITUTION: An apparatus for pickling Chinese cabbage with superheated steam includes the following: a mesh conveyor(2) transferring the Chinese cabbage; a cover covering the top of the mesh conveyor; a superheated steam supply device supplying the superheated steam to the cover; a hoist(5) lifting the cover; a cleaning water supply device installed on the cover; and a duct(4) installed on either side of the cover. The superheated steam supply device comprises a steam pipe and a lower steam pipe.
