<P>PROBLEM TO BE SOLVED: To provide a method for treating pericarp-containing citrus fruits, by which the pericarp-containing citrus fruits such as citrus fruits, citrus fruit periparps, or citrus fruit juices are treated to high-efficiently obtain an oil component and a liquid component from the pericarp-containing citrus fruits. <P>SOLUTION: This method for treating the pericarp-containing citrus fruits is characterized by freezing the pericarp-containing citrus fruits such as the citrus fruits, citrus fruit periparps, or citrus fruit juices with liquid nitrogen at -50 to -150°C (temperature of goods), giving impacts to the obtained frozen product to crack and micronize solid tissues and cells.
