A non-crystallizing, high dextrose equivalent syrup is produced by treatment of a partially hydrolysed starch having a dextrose equivalent of 15 to 30 with an enzyme composition until the dextrose equivalent reaches 67 to 69. The resulting syrup contains 38-42% dextrose and more than 75% total dextrose and maltose on a dry basis. The enzyme composition comprises a mixture of fungal alpha amylase and amyloglucosidase equivalent in potency to a mixture comprising from 78 to 85 weight per cent of a fungal alpha amylase having a nominal potency of about 262 mg./mg. amylase units and from 15 to 22 weight per cent of amyloglucosidase units per gram. The composition may also contain diatomaceous earth, dextrose or other fillers.ALSO:An enzyme composition comprises a mixture of fungal alpha amylase and amyloglucosidase equivalent in potency to a mixture comprising from 78 to 85 weight per cent of a fungal alpha amylase having a nominal potency of about 262 mg./mg. amylase units and from 15 to 22 weight per cent of amyloglucosidase having a nominal potency of about 300 amyloglucosidase units per gram.
