THICKENING AND GELLING AGENT

PROBLEM TO BE SOLVED: To provide a thickening and gelling agent by which an oil-in-water type emulsion composition having a high viscosity can be prepared regardless of the content of a monoester component of a fatty acid ester of sucrose. SOLUTION: The thickening and gelling agent contains the fatty acid ester of the sucrose obtained by adding 2-10 pts.wt. unsaturated fatty acid ester of the sucrose (e.g. sucrose oleate) containing a 14-20C unsaturated fatty acid as a constituent fatty acid to 100 pts.wt. saturated fatty acid ester of the sucrose (e.g. sucrose stearate) containing a 14-20C saturated fatty acid as a constituent fatty acid.
