<P>PROBLEM TO BE SOLVED: To provide mayonnaise-like food product having mayonnaise-like texture and extremely reduced in calorie, and to provide a method for producing the food product. <P>SOLUTION: The mayonnaise-like food product includes 4-8 mass% of thermally gelatinized processed starch, 5-15 mass% of starch syrup, 3-10 mass% of egg albumen and vinegar as main materials, has an acetic concentration of 0.2-0.8 mass%. The mayonnaise-like food product has a shear stress of not less than 300 Pa at the peak of gelatinization in the temperature sweep measurement (shearing speed: 40s<SP>-1</SP>) of 10% water suspension of the thermally gelatinized processed starch to be used, has an almost spherical shape of the grain of the thermally gelatinized processed starch after gelatinized, and has a calorie of not more than 70 kcal/100 g. The mayonnaise-like food product is produced by: heating slurry obtained by mixing raw material having 4-8 mass% of the thermally gelatinized processed starch, 5-15 mass% of starch syrup, 3-10 mass% of egg albumen and vinegar as main materials, and having an acetic concentration of 0.2-0.8 mass%; rapidly cooling the slurry; and stirring the cooled slurry with an emulsifying machine. <P>COPYRIGHT: (C)2010,JPO&INPIT |
