<P>PROBLEM TO BE SOLVED: To provide a sterilization method of fluid food that suppresses foaming of the fluid food to effectively prevent occurrence of a scorched portion while maintaining reducing effects of a sterilization time by a reciprocating sterilization method. Ž<P>SOLUTION: The sterilization method of a fluid food packed in a pouch includes performing reciprocating sterilization by intermittently reciprocating the pouch, where the intermittent reciprocation is conducted by repeating reciprocation and interruption so that reciprocation is interrupted for a sufficient time to allow foams generated in the fluid food by reciprocation for a selected reciprocating time to disappear to an extent to cause no scorch at the interface between the fluid food and a head space.
