<P>PROBLEM TO BE SOLVED: To provide a method for mass-producing pasta-shaped cheese crackers and snacks. <P>SOLUTION: The pasta-shaped cheese crackers or snacks are produced by mixing at least one kind of cereal powder, cheese and water to obtain a dough having about 5-60 wt.% content genuine cheese based on the weight of the dough, and extruding the dough at a pressure and temperature at which substantial gelatinization of starch and expansion of the dough are avoided. Dough ropes are prepared by extruding the dough through a die and the ropes are cut into small pieces of shaped dough. The small pieces of the shaped dough are baked or fried, to form hollow, lattice, spiral or pasta-shaped cheese crackers or snacks. The crackers or snacks have non-glassy and crispy or crunchy mass textures and pore structures without sponginess. <P>COPYRIGHT: (C)2010,JPO&INPIT |
