Treating fatty wastes comprises chemical treatment of fatty wastes (1, 1'), during which the fatty wastes are mixed with water (8) and an acid reagent (7) to obtain a demineralized oil phase free of mineral elements of alkali and alkaline earth metal, and an aqueous phase optionally including solid residues in precipitated form; and mechanical treatment including subjecting the obtained mixture to mechanical separation (11) by settling or filtering, for separating the demineralized fat phase of the aqueous phase.
