<P>PROBLEM TO BE SOLVED: To provide a new quick freezing method preventing cracks which often occur on an object to be treated in regular quick freezing. Ž<P>SOLUTION: The quick freezing method comprises bringing an object 1 to be treated, containing relatively much water, such as raw fish into contact with low-temperature brine so as to quickly freeze the object 1. In more details, the method comprises performing contact with the brine B in a condition of sticking a heat insulator 2 to part of the surface of the object 1. In the structure, the inside of the object 1 to be treated becomes frozen, and since the heat insulator 2 is stuck in the object 1, volume expansion to act on the surface of the object 1 is oriented to a heat insulating section having flexibility owing to delayed freezing, and set free as a projecting transformation to the outside of the section so as to prevent occurrence of cracks.
