<P>PROBLEM TO BE SOLVED: To economically produce arachidonic acid, and to provide a food formulated therewith. <P>SOLUTION: Microorganisms of the genus Mortierella sect. schmuckeri are cultured in a fermentation medium preferably containing composite nitrogen source components. The arachidonic acid is a precursor of eicosanoid important as a nutriment for infants, and a mixed milk for infants and a baby food having the improved content of the arachidonic acid are produced by formulating the microorganisms of the genus Mortierella sect. schmuckeri or a lipid isolated from such microorganisms to food products. <P>COPYRIGHT: (C)2010,JPO&INPIT |
