<P>PROBLEM TO BE SOLVED: To provide gelidium jelly free from smell inherent in gelidium jelly and having fresh flavor, by adding boiling-water-treated processing solution of grated fresh ginger juice to natural agar-agar gelidium jelly solution to gelatinize the mixture. <P>SOLUTION: The gelidium jelly having novel flavor and smoothness through the throat is produced by adding 10-15 wt.% of ginger solution, which is obtained by grating down fresh ginger roots, adding 1-2 mass% of boiling water to 1 mass% of the ginger grated juice, stirring the mixture, and filtrating the stirred mixture, to the gelidium jelly solution produced by a usual method, and cooling the mixture to be coagulated. <P>COPYRIGHT: (C)2010,JPO&INPIT |
