PROBLEM TO BE SOLVED: To provide a technique for producing a mannosyl erythritol lipid (MEL) having high safety and developable in the food application field, and selectively producing MEL-A, MEL-B or MEL-C. SOLUTION: The method for producing a mannosyl erythritol lipid includes culturing a microorganism of genus Ustilago separated from any one of plants of genus Saccharum, genus Malus, genus Perilla, genus Brassica and genus Cynodon.
