摘要 PURPOSE: A method of cooking pan-broiled rice cake(tteokbokgi) with pizza using white kimchi and pizza sauce is provided to improve a texture considering the existing methods of using red pepper pastes, and to prevent saggy and mushy rice cakes in the middle of a chilled distribution. CONSTITUTION: A method of cooking pan-broiled rice cake(tteokbokgi) with pizza using white kimchi and pizza sauce comprises the steps of: cleaning a rice and soaking it for 2~10 hours; salting the rice with 0.2~1 wt% of edible salt; grinding the salted rice with a roller grinder; adding one of the potato starch, corn starch, and sweet potato starch for 5~30wt% of the rice; steaming and shaping the rice with rice cake molder to make sliced rice cakes for a pan-broiled rice cake; preparing white kimchi 55 wt% without pH 4.9 fish sauce, white kimchi juice 8 wt%, sugar 9 wt%, ketchup 6 wt%, pizza sauce 5 wt%, sliced onion 6 wt%, and sliced carrot 3 wt%; heating the mixture with water starch 8 wt% to make a pan-broiled rice cake sauce by controlling the stickiness; putting the sliced rice cake into a disposable PP container; pouring the sauce and spreading the pizza cheese powder evenly; spreading a chopped bell pepper, pepper, and olive over the cheese powder; and sealing up with a polyester film.
