<P>PROBLEM TO BE SOLVED: To provide a quality improver for bakery products, comprising an aldonic acid disaccharide, capable of giving bakery products not only realizing common salt substitution but also having such quality-improved effects as to be good in palate feeling, soft-voluminous and good in storage stability after baked.
