PURPOSE: A method for preparing processed ginseng having enhanced ginsenoside content is provided. CONSTITUTION: A ginseng is hydrolyzed by adding enzyme so the content of ginsenoside which is isolated from a processed ginseng or its extract is enhanced. The enzyme is β-glucanase, pectinase, hemicellulase, cellulose, arabinase or xylanase. The ginseng is red ginseng. The ginsenoside is Rg2, and the enzyme is pectinase, hemicellulase, or cellulase. The ginsenoside is Rg3, and the enzyme is beta-glucanase, pectinase, hemicellulase or cellulase. The hydrolysis is performed before or together with the extraction. A health food composition contains the processed ginseng or ginseng extract as an active ingredient. The health food composition further contains gamma cyclodextrin.
