PURPOSE: A method for producing unrefined rice wine using grape and rice is provided to shorten fermentation time and ensure rich flavor and color of grape. CONSTITUTION: A method for producing unrefined grape rice wine comprises: a step of washing rice and soaking the rice for ten hours; a step of mixing water with flesh of grape in the weight ratio of 1:0.07; a step of steaming the rice for one hour; a step of drying grape skin at 45°C for 15 hours; a step of mixing the dried grape skin with water, yeast, and steamed rice and fermenting in a jar for 50 hours; a step of drying grape skin at 75°C for 10 hours; a step of fermenting the dried grape skin for 35 hours; and a step of filtering the fermented liquid. |
