<P>PROBLEM TO BE SOLVED: To provide a method for extracting essence of a bamboo without necessitating a large-scaled apparatus. <P>SOLUTION: A washed bamboo shoot with its sheath is thrown into a predetermined tank, and water in an amount to hide the bamboo shoot to the very limit is fed and an appropriate glucide as a fermentation accelerator is added. The bamboo shoot is allowed to spontaneously ferment for three to five years. In a second step, the fermented bamboo shoot is pressed to extract the essence thereof and the essence is added to the residual solution followed by filtration to extract the essence of the bamboo shoot. Thus, natural essence of a bamboo shoot, which is relatively easy to collect and transfer while reducing labor necessary for cutting down and transferring a bamboo, is inexpensively manufactured. <P>COPYRIGHT: (C)2010,JPO&INPIT |
