<p>Fish filleter handles all sizes and comprises a flat, veed table with groove for the upper belly and back fins and an inverted vee cover leading to two double-cone wheels to run each fish under a fork. Two paired sets of knives make four lengthways incisions either side of the backbone so that top and bottom chains engage these slits and another set of knives can lower down between the chains in between lower saw blades provided. The top cover acts as a switch to lower the upper knives, and spiked rollers help to feed the fish to the conveyor chains by driving their spikes between the vertebrae of the spine. As the chains run down to the lower guide they help to draw the flesh away from the spine. The outer ends of the tips of these two chains lie spaced to admit the vertebrae between and draw these downwards. The chains are angled so that the rims fo the fillets bear on the top guides, thus easing the backbones clear to drop into an offtake channel.</p> |
