A UV steriliser (1) is disclosed. The steriliser (1) has a housing (2) containing an ultra violet lamp (17) within a fluid pathway. First (3) and second (5) conduits in fluid communication with the housing (2) connect the housing to a reservoir and an end-use respectively. If water stops flowing for a length of time, its temperature will rise due to the radiation from the UV lamp (17). If the temperature is allowed to get too high it may damage the UV lamp (17) or pose a risk of scalding to a user. It is also disclosed the sterilisation of water using UV radiation loses efficiency when the temperature of the water exceeds 42 Co. To prevent these occurrences, the sterilizer includes a release valve (19) to release fluid from the fluid pathway if the temperature of the water exceeds a predetermined threshold, as determined by a trigger (20).
