Preparation of layered food portions of leafy vegetables such as spinach, comprises forming a uniform fine sheet of vegetable leaves in which the leaves are superimposed and arranged, subjecting the sheet to a heat treatment to soften the leaves and to enhance their adherence between them and cutting out the thermally treated sheets into portions. Independent claims are included for: (1) an installation for manufacturing layered food portions of leafy vegetables, such as spinach, comprising a unit for forming a uniform fine sheet of vegetable leaves, a unit for subjecting the sheet to a heat treatment and a unit for cutting out the thermally treated sheets into portions; and (2) a food portion of leafy vegetable, such as spinach with branches, obtained by the process, presents as vegetable sheets superimposed and agglomerated by heat treatment, comprising a layer. |
