FIELD: food industry. ^ SUBSTANCE: invention relates to technologies of canned compotes manufacturing. The method provides for preparation of the ingredients, preparation of a syrup out of the extract, packing of the quince and the syrup, sealing and sterilising. The prepared chicory is cut, dried in the microwave field for 1 hour minimum until its residual humidity is about 20% at the microwave field power warming the chicory inside the bits to 80-90C, roasted and crushed, the prepared grapes seeds are roasted, the chicory is mixed with the grapes seeds in the mass ratio 7:3, the obtained mixture is extracted with drinking water at phases ratio 1:(6-7) and periodic pressure releases in the extraction mixture until the water boils, the corresponding extract is separated and filtered. The syrup is prepared with dry substances content of 33.5-36.5% and the syrup is sterilised until industrial sterility is achieved. ^ EFFECT: production of compote with a coffee flavour and taste without actual coffee content in the recipe and simplified technology. ^ 1 tbl |
