摘要 PURPOSE: Cuttlefish bulgogi and a manufacturing method thereof are provided to improve appearance of the cuttlefish bulgogi by penetrating seasoning inside the cuttlefish, and to supplement nutrition of the cuttlefish by adding Lentinus edodes, green tea powder, and squid entratils. CONSTITUTION: A manufacturing method of cuttlefish bulgogi includes the following steps: cutting a cuttlefish; washing the cut cuttlefish with deep sea water with salinity of 4-5%; forming a cut-off groove on the cuttlefish by passing the washed cuttlefish through a roller with a blade; preserving the cuttlefish in the seasoning in which Lentinus edodes 5-20wt pt, the green tea powder 5-20wt pt and the squid entrails 5-20wt pt; sterilizing the seasoned cuttlefish for 0.5-2 minutes; wrapping the sterilized cuttlefish; aging the wrapped cuttlefish for 2 ~ 4 days; cooling the aged cuttlefish; and finishing products.
