PURPOSE: A soy protein isolate obtained with protease is provided to ensure low phytic acid content and enhance high solubility in acid condition. CONSTITUTION: A soy protein is isolated by adding protease to soy protein isolate solution and hydrolyzing at 50~70°C for 5 minutes to 10 hours. The hydrolysis stops by heating. The protease is alcalase, flavourzyme, protamex, neutrase, pepsin, and trypsin. The hydrolysate is additionally modified by adding 1,000-2,000 unit of phytase per 1g of soy protein isolate.
