PROBLEM TO BE SOLVED: To provide an image processing apparatus, image capturing apparatus and image processing method, which contribute to suppression of resolution degradation and reduction of noise that may occur when adding reading or thinning reading is performed on a pixel signal, and which suppress a circuit scale from being expanded. SOLUTION: A plurality of source images with different pixel positions, at which pixel signals are included, are captured sequentially and color interpolation processing is applied to each of the source images, thereby producing a color interpolation image. The generated color interpolation image (current frame) and a combination image (previous frame) output before are combined, thereby producing a combination image. The combination image is input to a color synchronization processing section 55 in order to output a video signal, and stored in a frame memory 52 for use for combination of the next frame.
