The invention relates to bakery industry, in particular to producing frozen dough semi-prepared bakery food namely to producing frozen partially-baked goods from wheat, rye, a mixture of different grades thereof using malt, sugar, treacle, yeast and additives of other grain crops. There proposed a method of production frozen semi-prepared bakery goods comprising making yeast according to the technology using wheat, rye, a mixture of different grades thereof, water and other composition components to reach preset moisture content, cutting the dough into pieces, laminating thereof during T≤0.75∙T, where Tis time of dough laminating and heating treatment comprising partial baking during 5-15 minutes in wet steam at 160-250°C and subsequent natural cooling and freezing during 30-60 minutes at -35 to -45°C. |
