<P>PROBLEM TO BE SOLVED: To provide a progressive freeze-concentration apparatus capable of ice crystals with less entrainment of solutes. Ž<P>SOLUTION: The progressive freeze-concentration apparatus 100 includes a freeze tank 10 which cools a target liquid moving in a specified direction by bringing into contact with a freezing plate 16 cooled with cooling brine so as to freeze water in the liquid and thereby concentrate the liquid, a stirrer 13 serving as a transfer means for transferring the liquid in the freeze tank 10 in a specified direction and a control section 20 for serving as a modification means for modifying the moving direction of the liquid moved by the stirrer 13. The moving direction of a solute in the liquid is changed by modifying the moving direction of the liquid moving within the freeze tank 10 with the stirrer 13 through the control section 20, resulting in the reduction of residence of the solute between dendrite ice crystals, or the reduction of entrainment of the solute in ice crystals.
