<p>The method comprises obtaining a wort from a mash, subsequently subjecting the wort to a temperature treatment, separating the hot sludge from the treated wort, and obtaining beer from the wort by fermentation after hot trub separation. A targeted evaporation is carried out in a cold area for the expulsion of undesirable aroma materials from the wort, is produced in the form of boiling and/or desorption, and continuously takes place by rectification. The gas e.g. air or nitrogen is introduced through the wort from below. The evaporation is carried out in a container in a step by step manner.
