FIELD: food industry. ^ SUBSTANCE: invention is related to preserved food industry. Conservation method includes pre-processing and packing tomatoes into jars, processing them in microwave field with frequency of 240050 Mhz during 50-60 sec, filling with tomato pulp or tomato juice with temperature at least 95-97C, following jars closure and sterilising in autoclave. ^ EFFECT: invention allows to decrease sterilising duration, decrease inequality of thermal processing and provide saving of thermal energy. ^ 1 ex |
