Flavonoid sugar addition products, method for manufacture and use thereof

Disclosed is a process for manufacturing a flavonoid sugar-addition product, wherein the flavonoid is C-glycosylated with a reducing sugar comprising the step of reacting a flavonoid-containing starting material with a sugar at a pH of 8 to 12. The product from this process can be used for reducing the bitter and astringent taste of food products, pharmaceutical preparations or cosmetics that come into contact with the oral cavity.
