Discloses the grain obtained from a wheat plant comprising starch and a null mutation of a starch branching enzyme IIa (SBEIIa) gene or an introduced nucleic acid which encodes an inhibitor of SBEIIa gene expression, wherein the proportion of amylose in the starch of the grain is at least 30% (w/w).
