<p>Described herein are methods for isolating ovomucin in high yields and purity. In one aspect, the method involves contacting egg whites with a first solution including an alkali metal salt, an alkaline earth metal salt, or a combination thereof to produce a first precipitate composed of ovomucin; and separating the first precipitate. Subsequent steps such as, for example, additional contacting with an alkali metal salt, an alkaline earth metal salt, or a combination thereof and acidification can be performed to enhance yields and purity. In other aspects, crude ovomucin can be purified by washing the crude ovomucin with high concentrations of an alkali metal salt, an alkaline earth metal salt, or a combination thereof.</p> |
