摘要 Sesame noodles and its preparation method are provided to enhance the quality of sesame noodles by using oil-removed sesame powder, and to facilitate the ingestion of sesame, black sesame, perilla seeds, etc. Sesame noodles are prepared by the steps of: (a) parching at least one selected from sesame, black sesame and perilla seeds at 180~250°C; (b) pulverizing the parched sesame in 20~200mesh size while removing 10~20wt.pt of sesame oil based on 100wt.pt of the parched sesame; (c) mixing 1~30wt% of the sesame powder and 70~99wt% of flour comprising at least one selected from wheat flour, rice flour, barley flour, corn flour, buckwheat flour and starch; (d) adding 25~50wt.pt of water to the mixture, based on 100wt.pt of the flour, and kneading dough; and (e) making noodles with the dough.
