Bacterial composition comprises a first mixture comprising at least one bacterial strain having lipolytic activity, at least one bacterial strain having hemolytic activity, and at least one bacterial strain having nitrifying activity; and a second mixture comprising at least one bacterial strain having denitrifying activity. An independent claim is included for a process for treating fat effluents of blood, comprising culturing the first and the second bacterial mixture of the composition, in a first and in a second biological reactor respectively, introducing the effluent to be treated in a homogenization vat maintained under stirring, circulating the homogenized effluent in the first reactor for degrading fat and blood cells, digesting blood proteins and carrying out nitrification reactions, circulating the effluent obtained from the first reactor in the second reactor for carrying out the denitrification of nitrates into nitrogen gas, and removing the treated effluent from the second reactor towards a refiner, before disposing towards a purification plant.
