<P>PROBLEM TO BE SOLVED: To provide a method for determining a rice polishing-precision capable of rice polishing uniformly in rice polishing-precision, most deliciously at a high yield, and of determining whether the polishing-precision is optimum, and a rice polishing method and a rice polishing-precision meter. Ž<P>SOLUTION: The method for determining rice polishing reference includes the steps of making cooked rice by adding water and heating polished rice of the same raw material unpolished rice with a number of different rice polishing-precision, measuring the rice polishing degree of the cooked rice at a fixed condition, measuring eating quality of the cooked rice, selecting the rice polishing-degree at the most excellent eating quality and the highest yield from among rice polishing degrees of cooked rice, and thereby deciding a reference rice polishing-degree to determine the rice polishing-precision. The rice polishing method makes cooked rice by adding water and heating the polished rice extracted from a rice-polishing machine and adjust the rice polishing-precision of the rice-polishing machine so that the rice polishing degree of cooked rice is the reference rice polishing degree. The rice polishing-precision meter includes a cooked rice sample producing section, a rice polishing-degree measuring section, and a display controller for displaying measured rice polishing-degree as measured rice polishing-precision.
