<P>PROBLEM TO BE SOLVED: To provide a method for industrially obtain a phosphorylated saccharide having high calcium dissolving ability, exhibiting high function compared with conventional phosphorylated saccharides, developing the effect at a reduced addition amount and expectable to be effective in vivo. <P>SOLUTION: The method for producing a phosphorylated saccharide having an average polymerization degree of 15-100 and an average number of bonded phosphorus atoms per one molecule of ≥3 comprises the addition of an amylolytic enzyme to a suspension of a phosphorylated starch having a bonded phosphorus content of 0.1-5 mass% to depolymerize the phosphorylated starch by enzymatic decomposition and obtain an enzymatically decomposed liquid, and the purification of the enzymatically decomposed liquid by ion exchange resin treatment and/or membrane treatment to obtain a phosphorylated saccharide fraction having an average polymerization degree of 15-100 and an average number of bonded phosphorus atoms per one molecule of ≥3. <P>COPYRIGHT: (C)2010,JPO&INPIT |
