PURPOSE: Dough for Sujebi(clear soup with wheat flakes) using potatoes, and a preparation method thereof are provided to make Sujebi contain useful components from potato's rind and starch. CONSTITUTION: A method for preparing dough for Sujebi(clear soup with wheat flakes) using potatoes comprises the following steps of: washing potatoes(S1); peeling the washed potatoes(S2); grating the peeled potatoes to obtain potato juice(S3); leaving the potato juice to stand for 10-20 minutes in order to precipitate potato starch(S4); taking out a supernatant from the precipitated potato starch(S5); mixing the 92-98wt% potato starch, 4-8wt% potato rind, and 100wt% supernatant-removed juice; and making dough(S6). |
