<P>PROBLEM TO BE SOLVED: To provide a method for producing sausage using sausage casings which are colored, curved in a moderately arched shape, edible and soft in palate feeling. <P>SOLUTION: The method for producing colored and curved sausage includes the following steps: A chain of colored collagen casings are filled with a sausage emulsion to form sausage-filled parts and link parts. Loops each including 1 to 15 resultant sausage-filled parts are formed. Thereafter, the loops are positioned around a cylindrical hanging rod having a radius of 30-150 mm and having a circumferential length slightly shorter than that of each of the loops, followed by conducting a heat treatment. <P>COPYRIGHT: (C)2010,JPO&INPIT |
