摘要 FIELD: food industry. ^ SUBSTANCE: invention relates to canned compotes manufacturing technique. The method involves preparation of the recipe components, preparation of syrup on the extract basis, packing of apricots and the syrup, hermetic sealing and heat treatment. Prepared topinambur is cut, dried in the microwave field up to the residual moisture content of about 20% under the microwave field power providing for heating up to the temperature of 80-90C inside the topinambur pieces during at least 1 hour, fried and crushed, the prepared grape seeds are fried, the grape seeds and topinambur are mixed with the mass proportion of 7:3, the obtained mix is extracted by drinking water with the phase proportion of 1:(6-7) and periodical pressure release in the extraction mix up to water boiling, separation of the respective extract and its filtration follow. Syrup is produced with the solids content of 31-43.5% and the heat treatment is carried out until industrial sterility is obtained. ^ EFFECT: method allows for the production of compote with coffee flavour with no coffee used in the recipe, simplification of the technique and decrease the content of cooked soft fruits in the end product without reducing its shelf life. ^ 1 tbl
