摘要 FIELD: food industry. ^ SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Lemon peels is extracted by liquid nitrogen with corresponding miscella separation. Girasol and pears are prepared, cut and dried in microwave field at preset process parametres. Girasol is fried, pears are dried by convective method, girasol and pears are mixed in mass ratio 3:2. Obtained mixture is impregnated by separated miscella with simultaneous pressure boost. Depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen follow. ^ EFFECT: method allows to produce flavoured coffee drink according to nonwaste technology.
