<P>PROBLEM TO BE SOLVED: To provide a collagen degrading enzyme having collagen degrading activity at low temperatures, and preferentially degrading collagen, to provide a psychrophilic bacterium producing the enzyme, to provide a method for producing the enzyme, and to provide a method for producing tenderized meat using the enzyme. <P>SOLUTION: The phychrophilic bacterium is a motile and gram-negative bacillus having 3 μm and 1 μm lengths, a red bacterial cell color during bacterial collection, 4-37°C growable temperature, and 20-33°C optimum growth temperature without producing hydrogen sulfide under aerobic conditions. In the phychrophilic bacterium, the base sequence of 16S rRNA gene has a base sequence described in sequence number 1. The phychrophilic bacterium produces the collagen degrading enzyme having 60-72 kDa molecular weight according to an SDS-PAGE method, and the collagen degrading activity at the low temperatures. The collagen degrading enzyme having the collagen degrading activity at the low temperatures is obtained by culturing the psychrophilic bacterium. <P>COPYRIGHT: (C)2010,JPO&INPIT |
