[PROBLEMS] To provide a process for producing soy milk whereby various enzymes causative of a grassy smell are completely inactivated while preventing unevenness in heating and thermal denaturation of protein can be conducted to an appropriate extent and a favorable flavor is constructed to thereby give soy milk which can be processed, by coagulation, into tofu having a high water-retention, a high elasticity and a rich flavor; and an apparatus for producing soy milk. [MEANS FOR SOLVING PROBLEMS] An apparatus comprising: a submerged grinding unit (M) in which soybeans are ground together with a grinding solution in a submerged state in a grinding part to give goeki (a soybean paste); a heating unit (N) in which the goeki obtained in the submerged grinding unit (M) is heated; a connecting pipe (P2) whereby the submerged grinding unit (M) is connected to the heating unit (N); and a preheating unit (Y1) which is attached to the connecting pipe (P2) for preheating the goeki; wherein the goeki obtained in the submerged grinding unit (M) is fed into the heating unit (N) while preheating and then further heated in the heating unit (N). The heating process (N) may be conducted in multiple stages. |
