PURPOSE: A method for preparing parched brown rice is provided to enable a consumer to eat like a snack and to improve consumer preference. CONSTITUTION: A method for preparing parched brown rice comprises the following steps of: washing brown rice several times and soaking it in water for 10-15 hours; steaming it at 100-150°C for 0.5-1 hour to obtain hard-boiled rice; mixing 10 parts of plum extract, ginseng extract, jujube extract, ginger extract or soy sauce in 100 parts of water to prepare a diluted liquid; soaking the hard-boiled rice in the diluted liquid for 20-30 minutes; steaming the soaked rice at 100-150°C for 0.5-1 hours; placing the steamed rice in the sun for 2-3 days to be naturally pulverized; mixing 80-90wt% of loess powder, 5-10wt% of yam powder, and 5-10wt% of water and molding them into a loess pill with diameter of 0.5-1.0cm; mixing the pulverized rice and loess pill in a ratio of 1 : 0.5 ~ 1; uniformly parching the mixture at 70-120°C for 0.5-1 hours; and separating the loess pills from the mixture. |
