PURPOSE: A method for maintaining the freshness of fish is provided to prevent microorganisms from being adhered to fish owing to chitosan and vitamin C. CONSTITUTION: A method for maintaining the freshness of fish comprises the following steps of: removing inedible portions from fish such as internal organs and blood; dipping the fish in a liquid with dissolved ozone concentration of 0.01-0.5ppm for 10minutes to 1 hour; preparing a solution of chitosan mixed with vitamin C in a sprayer and uniformly spraying it over the fish in a ratio of 10-100mL/kg; and naturally drying the fish for 0.5-2 hours.
