PROBLEM TO BE SOLVED: To provide a method for efficiently producing a highly functional microbial surface active substance (biosurfactant) by efficiently making use of compositions being byproducts in the processes of producing the liquors, excluding liquors, as unused resource. SOLUTION: The biosurfactant is produced by fermentation at lower cost in a shorter period of time and more efficiently by using a medium containing a composition excluding liquor which is a byproduct in the process of producing the liquor, compared with a process using a conventional production medium, and in addition, the compositions excluding liquors which have been the unused resource of the byproducts in the process of producing the liquor is effectively used.
