Disclosed are: a Saccharomyces cerevisiae mutant strain which is characterized by having an RNA content of 14 wt% or more relative to the weight of the dried cells of the mutant strain; Saccharomyces cerevisiae strain ABYC1591 (FERM BP-10925); a method for producing an yeast having a high RNA content, which is characterized by culturing any one of the above-mentioned Saccharomyces cerevisiae mutant strains to accumulate RNA in the cell bodies of the mutant strain in an amount of 14 wt% or more relative to the weight of the dried cells of the mutant strain; a culture of any one of the above-mentioned Saccharomyces cerevisiae mutant strains; and an yeast extract produced from the culture. The Saccharomyces cerevisiae mutant strain has a high RNA content and good proliferation properties.
