摘要 FIELD: food industry. ^ SUBSTANCE: invention is related to preserved food industry. Two-stage apricote compote warming up in water at 80 C and 100 C respectively 10 and 20 minutes with following cooling in air flow during 15 minutes at speed 5-6 m/s are performed. Cooling is continued with drawing of 14 mm water slick on tin-plate can during 5 minutes.
