<p>The appliance (1) has a cooking sensor (2) for determining a condition of a product e.g. meat, to be cooked (6). A light source (36) e.g. flash lamp, sectionally and/or periodically irradiates a fluid medium e.g. oil, or ingredients of the medium with electromagnetic radiation. Absorption and/or emission of the radiation is measured with the sensor. The radiation is resulted by substances delivered from the product to be cooked in the medium. A parameter is calculated by a central control unit/processing unit (33), where the parameter correlates with the condition of the product to be cooked. The fluid medium is one of cooking chamber atmosphere, air, steam, water and fat. Independent claims are also included for the following: (1) a method for determining conditions of products to be cooked in a cooking chamber of a cooking appliance (2) a method for guiding a cooking process with a cooking appliance.</p> |
