PROBLEM TO BE SOLVED: To provide a method for producing tempeh-containing cheese more excellent in palatability, by which tempeh is more integrally unified with cheese than powdery frozen-dried tempeh. SOLUTION: The method for producing tempeh-containing cheese comprises mixing tempeh paste which is obtained by adding water to tempeh-fungi fermented soybean as soybean fermented food; and forcibly beating the mixture to be pasted, with non-aging/salt-free semihard cheese raw material to make process cheese. The method may comprise mixing the tempeh paste with non-aging/salt-free soft natural cheese raw material to suitably produce fresh cheese. COPYRIGHT: (C)2009,JPO&INPIT
